830WG RTE Four Cheese Tortellini 1 bags (5 lbs)
Marinara sauce, divided 8 cups
Parmesan cheese, grated For garnish (optional)

PREPARATION

Thaw:
1. Empty frozen tortellini into a large container of warm water (90-100oF)
2. Gently toss tortellini for 30-60 seconds
3. Drain the water (tortellini can be held under refrigeration for up to an hour)

Cooking:
1. Spray a standard size hotel pan with non-stick spray
2. Spread 8 cups of marinara sauce evenly across bottom of hotel pan
3. Cover with aluminum foil
4. Place the sauce-filled pan in the oven for 20-30 minutes until the sauce reaches 170-180oF
5. Remove the heated sauce from the oven
6. Add tortellini to the heated sauce and mix until all tortellini has been coated
7. Cover with aluminum foil
8. Place in warmer for 15 minutes for the tortellini to evenly warm
9. Carefully remove from oven and discard foil
10. Garnish with grated Parmesan cheese (optional)
