Ingredients

830WG Four Cheese Tortellini
1 bags (5 lbs)

Marinara sauce, divided
4 cups + 4 cups

Parmesan cheese, grated
For garnish, optional

Preparation

Thaw
1. Heat water to a full boil (use 3 quarts of water for each 1 lb of tortellini)
3. Add the frozen tortellini to the boiling water. Gently stir the contents, initially and periodically, to prevent sticking
4. Boil the tortellini for approximately 3-4 minutes; the tortellini will begin to float
5. Cooking equipment, equipment settings, and kitchen conditions will vary so cooking time may need adjusting
6. Cook all food thoroughly to 165oF
7. Drain water from tortellini

Cooking
1. Spray a standard size hotel pan with non-stick spray
2. Spread 8 cups of marinara sauce evenly across bottom of hotel pan
3. Cover with aluminum foil
4. Place the sauce-filled pan in the oven for 20-30 minutes until the sauce reaches 170-180oF
5. Remove the heated sauce from the oven
6. Add tortellini to the heated sauce and mix until all tortellini has been coated
7. Cover with aluminum foil
8. Place in warmer for 15 minutes for the tortellini to evenly warm
9. Carefully remove from oven and discard foil
10. Garnish with grated Parmesan cheese (optional)
